
Tomato Bruschetta
Bruschetta- which in Italian is an antipasto is something that is served before a meal. In English it is simply toast with a topping and can also be served as nibbles with drinks before the meal
One of the easiest first courses to make and always prove to be a favourite everywhere I have served them. They are healthy, light and tasty and are vegetarian too… lots of boxes ticked
The most basic version is grilled or toasted bread rubbed with a cut garlic clove and topped with a little olive oil and salt. These are utterly delicious.
Ingredients:
Bread to suit what you have - better toasted to soak up the juice
(could be baguette, thick sliced, sourdough, flatbread, naan, almost any type of bread)
Tomatoes - 2 medium sized tomatoes per person for a starter/snack portion
Drizzle of olive oil
Sugar - a good pinch to taste
Salt and Pepper to your taste
How to....
Cut your bread into slices and then toast, grill or bake
You can toast as normal in a toaster (no oil on bread)
or bake them in the oven, which is at a temperature of 180 c . Place them on a flat baking tray and sprinkle the tray with oil (olive, rapeseed or sunflower oil) - and bake this should take 5/10 mins. You want them crispy but not burnt.
Chop your tomatoes finely and put into a bowl. Mix in the seasoning, a little sugar, salt and pepper.
Put the chopped tomatoes on to your toasts just before serving, otherwise the toast will go soggy.
To pimp them up:

add finely chopped herbs of your choice to the tomato mix (chives, basil, dill, coriander - you choose your favourite),

cut a raw garlic clove in half and rub it over the crispy toast or
-
spread the toast with pesto, anchovy or olive paste.
