Tomato Bruschetta
Bruschetta- Italian antipasto, served before a meal and is simply toast with a topping, a first course/snack/light lunch or with drinks - its just a matter of size

Ingredients:
Bread - 1 or 2 slices per person, to suit your choice of bread 1 slice of sourdough or 2 or 3 slices of baguette rounds
Tomatoes - 2 medium sized tomatoes per person
Sugar - to taste, use like salt and pepper ¼ teaspoon
Salt and Pepper to taste, a pinch of both
Other favourite toppings; olive oil, garlic, and fresh herbs
How to....
Cut your bread into slices and then toast, grill or bake.
You can toast as normal in a toaster (no oil on bread)
or bake them in the oven, which is at a temperature of 180 c . Place them on a flat baking tray and sprinkle the tray with oil (olive, rapeseed or sunflower oil) - this should take 5/10 mins. You want them crispy.
Chop your tomatoes finely and put into a bowl. Mix in the seasoning, a little sugar, salt and pepper.
Put the chopped tomatoes on to your toasts just before serving, otherwise they will go soggy.
Simple and delicious. To pimp them up; add finely chopped herbs of your choice to your tomato mix (chives, basil, dill, coriander - you choose your favourite), or If you like a slight hint of garlic - cut a garlic clove in half and rub it over the crispy toast or spread the toast with pesto, anchovy or olive paste. Or like an open sandwich, top with pickle or mustard and ham or cheese… Create.
