Cucumber Raita
Cucumber dish, so simple and fresh. It makes a good snack/first course or can be used as an accompanying side dish or dressing

Ingredients:
1 Cucumber
1 eating apple
Greek Yoghurt
Crushed Garlic clove
Fresh Mint a handful
Salt and pepper to taste
How to:
Wash and thinly slice your cucumber and apple (these can be peeled or not, depending on how you react to cucumber skin) if in doubt peel it. Apple will discolour quickly so leave them until you are ready to cover in the marinade of yoghurt.
Mix the greek yoghurt with the crushed and finely chopped fresh garlic and finely chopped fresh mint, salt and pepper to taste. Cover the slices of cucumber and apple in the yoghurt mix and leave to marinade for as long as you want or have. If you make it in advance put it in the fridge, but bring it out ½ hour before you eat so that it is not ice cold. Place the cucumber rounds on your plates in a decorative way. Layered over each in a round or a couple of lines.
